- 1 lb ground beef
- 4 cups diced potatoes
- 1 cup diced onion
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until it becomes soft and translucent, about 5 minutes.
- Next, add the minced garlic and ground beef. Cook until the beef is browned, breaking it apart with a spatula, around 7-10 minutes.
- Stir in the diced potatoes and beef broth. Bring to a simmer and cover the skillet. Let it cook for about 15-20 minutes, or until the potatoes are tender.
- Once the potatoes are cooked, reduce the heat to low. Stir in the heavy cream and shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley, if desired. Enjoy this hearty meal!
