Deliciously tangy and creamy lemon squares with a buttery crust.

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Optional (powdered sugar for dusting)

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine 1 cup of flour, 1/2 cup of softened butter, 1/4 cup of powdered sugar, and 1/2 teaspoon of salt. Mix until crumbly and press into the bottom of a greased 8-inch square baking dish.
  • Bake the crust in the preheated oven for about 15 minutes, or until lightly golden.
  • While the crust is baking, whisk together 1 cup of granulated sugar, 2 large eggs, 1/4 cup of fresh lemon juice, 1 teaspoon of lemon zest, and 1/2 teaspoon of baking powder in a separate bowl until smooth.
  • Once the crust is done baking, pour the lemon filling over the hot crust. Bake for an additional 20-25 minutes, or until the filling is set.
  • Allow the lemon squares to cool completely in the pan before cutting them into squares. Dust with powdered sugar if desired.
