- 1 cup all-purpose flour
- 1/2 cup unsalted butter (softened)
- 1/4 cup powdered sugar
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 teaspoon lemon zest
- 1/2 teaspoon baking powder
- Optional (powdered sugar for dusting)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup of flour, 1/2 cup of softened butter, 1/4 cup of powdered sugar, and 1/2 teaspoon of salt. Mix until crumbly and press into the bottom of a greased 8-inch square baking dish.
- Bake the crust in the preheated oven for about 15 minutes, or until lightly golden.
- While the crust is baking, whisk together 1 cup of granulated sugar, 2 large eggs, 1/4 cup of fresh lemon juice, 1 teaspoon of lemon zest, and 1/2 teaspoon of baking powder in a separate bowl until smooth.
- Once the crust is done baking, pour the lemon filling over the hot crust. Bake for an additional 20-25 minutes, or until the filling is set.
- Allow the lemon squares to cool completely in the pan before cutting them into squares. Dust with powdered sugar if desired.
