- 2 cups orzo pasta
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup heavy cream
- 1 lemon zested and juiced
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown, about 5-7 minutes.
- Add minced garlic and cook for 1 more minute until fragrant.
- Stir in the orzo and chicken broth, bringing it to a boil. Reduce heat, cover, and let it simmer for 10 minutes or until the orzo is cooked al dente.
- Once the orzo is cooked, stir in the heavy cream, lemon zest, lemon juice, and Parmesan cheese. Let it simmer for another 2-3 minutes until creamy.
- Garnish with fresh parsley before serving.
