- 8 oz pasta ((fettuccine, penne, or spaghetti))
- 4 oz goat cheese
- 1 cup heavy cream
- 1 tablespoon olive oil
- 2 cloves garlic (minced)
- 1/2 cup grated Parmesan cheese
- Salt and pepper (to taste)
- Fresh basil or parsley (for garnish)
Instructions
- Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions. Reserve about 1/2 cup of pasta water, then drain the rest.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
- Pour in the heavy cream and bring it to a gentle simmer. Stir in the goat cheese and mix until it melts into a creamy sauce.
- Add the grated Parmesan cheese to the skillet, mixing well to combine. If the sauce is too thick, add a little pasta water until desired consistency is reached.
- Once the pasta is ready, toss it into the skillet with the sauce. Stir until the pasta is well coated. Season with salt and pepper to taste.
- Serve immediately, garnished with fresh basil or parsley. Enjoy your creamy goat cheese pasta!
