  • 4 oz goat cheese
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper (to taste)
  • Fresh basil or parsley (for garnish)

Instructions

  • Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions. Reserve about 1/2 cup of pasta water, then drain the rest.
  • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.
  • Pour in the heavy cream and bring it to a gentle simmer. Stir in the goat cheese and mix until it melts into a creamy sauce.
  • Add the grated Parmesan cheese to the skillet, mixing well to combine. If the sauce is too thick, add a little pasta water until desired consistency is reached.
  • Once the pasta is ready, toss it into the skillet with the sauce. Stir until the pasta is well coated. Season with salt and pepper to taste.
