A quick and delicious salmon dish, featuring a creamy garlic butter sauce with sun-dried tomatoes and spinach.

  • 4 fillets salmon
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup spinach, fresh
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • for garnish Fresh basil

Instructions

  • Season the salmon fillets with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add salmon fillets skin-side down.
  • Cook for about 5-6 minutes until golden brown, then flip and cook for another 4-5 minutes.
  • Remove the salmon from the skillet and set aside.
  • In the same skillet, melt butter and sauté garlic for 30 seconds.
  • Pour in the heavy cream and add sun-dried tomatoes, spinach, Parmesan, and seasoning.
  • Simmer for 2-3 minutes until thickened.
  • Return salmon to the skillet, spoon sauce over, and cook for 1 minute.
  • Garnish with fresh basil and serve.
