- 4 fillets salmon
- to taste Salt and pepper
- 2 tablespoons olive oil
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- for garnish Fresh basil
Instructions
- Season the salmon fillets with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add salmon fillets skin-side down.
- Cook for about 5-6 minutes until golden brown, then flip and cook for another 4-5 minutes.
- Remove the salmon from the skillet and set aside.
- In the same skillet, melt butter and sauté garlic for 30 seconds.
- Pour in the heavy cream and add sun-dried tomatoes, spinach, Parmesan, and seasoning.
- Simmer for 2-3 minutes until thickened.
- Return salmon to the skillet, spoon sauce over, and cook for 1 minute.
- Garnish with fresh basil and serve.
