- 2 cups fresh tomatoes (diced (about 4 medium tomatoes))
- 4 cloves garlic (minced)
- 1 tablespoon olive oil
- 1 cup heavy cream (or a dairy-free alternative)
- 1 teaspoon salt (adjust to taste)

- 1/2 cup grated Parmesan cheese (optional for garnish)
- Fresh basil leaves (for garnish)
- 12 ounces pasta (your favorite type (spaghetti, penne, or fettuccine work well))
Instructions
- Start by cooking your pasta according to the package instructions. Make sure to salt your water well; it’s the only chance to season the pasta itself!
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to burn it.
- Add the diced tomatoes to the skillet, along with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes have softened and released their juices.
- Reduce the heat to low, then stir in the heavy cream. Allow it to simmer for 2-3 minutes, mixing well to combine everything.
- Once your pasta is cooked and drained, add it directly to the tomato sauce in the skillet. Toss everything together until the pasta is well-coated with the creamy sauce.
- Serve immediately, garnished with grated Parmesan cheese and fresh basil leaves. Enjoy your delicious creation!
