Tender chicken thighs simmered in a rich and creamy Dijon mustard sauce, perfect for an easy weeknight dinner.

  • 4 pieces bone-in, skin-on chicken thighs
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/4 cup Dijon mustard
  • 1/4 cup white wine or chicken broth
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Season the chicken thighs with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin side down and cook for about 5-7 minutes, until golden brown.
  • Flip the chicken and cook for another 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.
  • Pour in the white wine (or chicken broth) to deglaze the pan, scraping up any bits stuck to the bottom.
  • Stir in the Dijon mustard and heavy cream, mixing well. Let it simmer for 2-3 minutes until slightly thickened.
  • Return the chicken thighs to the skillet, spooning the sauce over them. Cook for an additional 5 minutes, until the chicken is cooked through and the sauce is creamy.
  • Garnish with fresh parsley before serving.
