- 4 fillets cod (about 6 ounces each)
- 1 can coconut milk (13.5 ounces)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 2 tablespoons honey (or agave syrup)
- 2 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley (chopped, for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the coconut milk, lemon juice, lemon zest, honey, minced garlic, salt, pepper, and paprika until well combined.
- Place the cod fillets in a baking dish. Pour the coconut lemon mixture over the cod, ensuring each fillet is well-coated.
- Bake in the preheated oven for about 20-25 minutes, or until the cod flakes easily with a fork.
- Once done, remove from the oven and garnish with fresh parsley before serving. Enjoy!
