- 1 pound ground meat (beef, chicken, or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon curry powder
- 1 tablespoon olive oil
- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic, ginger, salt, pepper, and curry powder.
- Shape the mixture into 1-inch meatballs and place on a baking sheet.
- Heat olive oil in a skillet, brown meatballs on all sides for 8-10 minutes.
- Remove meatballs, add coconut milk, red curry paste, soy sauce, and lime juice to the skillet, and simmer.
- Return meatballs to the skillet, simmer for an additional 10 minutes.
- Garnish with cilantro and serve.
Notes
- Feel free to use your choice of ground meat.
- Adjust the spice level by adding more or less curry paste.
