Delicious and creamy coconut curry meatballs that are easy to prepare and bursting with flavor.


Ingredients

  • 1 pound ground meat (beef, chicken, or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon curry powder
  • 1 tablespoon olive oil
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix ground meat, breadcrumbs, Parmesan, egg, garlic, ginger, salt, pepper, and curry powder.
  2. Shape the mixture into 1-inch meatballs and place on a baking sheet.
  3. Heat olive oil in a skillet, brown meatballs on all sides for 8-10 minutes.
  4. Remove meatballs, add coconut milk, red curry paste, soy sauce, and lime juice to the skillet, and simmer.
  5. Return meatballs to the skillet, simmer for an additional 10 minutes.
  6. Garnish with cilantro and serve.

Notes

  • Feel free to use your choice of ground meat.
  • Adjust the spice level by adding more or less curry paste.
