- 1 pound boneless, skinless chicken breasts, diced

- 2 cups chicken broth
- 1 cup heavy cream
- 1 pound potato gnocchi
- 1 cup fresh spinach, chopped (optional)
- Salt and pepper to taste
- Parmesan cheese, grated (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and Italian seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Once the chicken is cooked, add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.
- Add the gnocchi to the skillet and cook according to package instructions, usually about 3-5 minutes until they float to the top.
- If using, stir in the chopped spinach in the last minute of cooking until wilted.
