- 8 oz penne pasta
- 1 lb smoked sausage, sliced
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 tsp Cajun seasoning
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Chopped parsley for garnish, optional
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
- Add the diced onion, minced garlic, and chopped bell pepper to the skillet. Sauté until the vegetables are tender, around 3-4 minutes.
- Pour in the heavy cream and chicken broth. Stir in the Cajun seasoning, salt, and pepper. Bring to a gentle simmer.
- Stir in the shredded cheddar cheese until melted and creamy. Add the cooked pasta, mixing well to combine.
- Cook for an additional 2-3 minutes until heated through. Taste and adjust seasoning if needed.
- Serve immediately, garnished with chopped parsley if using.
