  • 1 lb smoked sausage, sliced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 tsp Cajun seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish, optional

Instructions

  • Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  • Add the diced onion, minced garlic, and chopped bell pepper to the skillet. Sauté until the vegetables are tender, around 3-4 minutes.
  • Pour in the heavy cream and chicken broth. Stir in the Cajun seasoning, salt, and pepper. Bring to a gentle simmer.
  • Stir in the shredded cheddar cheese until melted and creamy. Add the cooked pasta, mixing well to combine.
  • Cook for an additional 2-3 minutes until heated through. Taste and adjust seasoning if needed.
  • Serve immediately, garnished with chopped parsley if using.
