- 2 breasts boneless, skinless chicken
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 8 ounces fettuccine or penne pasta
- 1 cup diced bell peppers
- 1/2 cup chopped green onions
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Start by cooking the pasta according to package instructions. Drain and set aside.
- While the pasta cooks, season chicken breasts with Cajun seasoning, salt, and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest.
- In the same skillet, add minced garlic and diced bell peppers. Sauté for 3-4 minutes until the peppers are tender.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, mixing until the sauce is smooth.
- Slice the cooked chicken into strips and add it back to the skillet along with the cooked pasta. Toss until everything is well coated in the sauce.
- Garnish with chopped green onions and fresh parsley if desired. Serve immediately.
