  • 2 breasts boneless, skinless chicken
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 8 ounces fettuccine or penne pasta
  • 1 cup diced bell peppers
  • 1/2 cup chopped green onions
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Start by cooking the pasta according to package instructions. Drain and set aside.
  • While the pasta cooks, season chicken breasts with Cajun seasoning, salt, and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest.
  • In the same skillet, add minced garlic and diced bell peppers. Sauté for 3-4 minutes until the peppers are tender.
  • Pour in chicken broth and bring to a simmer. Stir in heavy cream and Parmesan cheese, mixing until the sauce is smooth.
  • Slice the cooked chicken into strips and add it back to the skillet along with the cooked pasta. Toss until everything is well coated in the sauce.
  • Garnish with chopped green onions and fresh parsley if desired. Serve immediately.
