- 2 cups cooked pasta (penne or rotini work great)
- 1 pound chicken breast (diced)
- 1 tablespoon Cajun seasoning
- 2 cups heavy cream
- 1 cup Parmesan cheese (grated)
- 1 cup mozzarella cheese (shredded)
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- to taste Salt and pepper
- Fresh parsley (chopped for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- In a skillet, heat olive oil over medium heat. Add the diced chicken, Cajun seasoning, garlic powder, salt, and pepper. Cook until the chicken is golden brown and cooked through, about 7-10 minutes.
- In a large mixing bowl, combine the cooked pasta, chicken mixture, heavy cream, and half of the Parmesan cheese. Stir until well combined.
- Transfer the mixture to the prepared baking dish. Top with the remaining Parmesan and mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown.
- Let it cool for a few minutes, then garnish with fresh parsley before serving.
