- 2 cups fresh tortellini (or 1 cup dried)
- 1 cup cherry tomatoes (halved)
- 1 cup heavy cream
- 8 oz burrata cheese
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- Salt and pepper (to taste)
- Fresh basil (for garnish)
Instructions
- Start by boiling water in a large pot. Add a pinch of salt and cook the tortellini according to package instructions.
- While the tortellini cooks, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the halved cherry tomatoes to the skillet. Cook them for about 5-7 minutes until they start to soften and burst.
- Once the tortellini is cooked, drain it, and add it directly to the skillet with the tomatoes. Pour in the heavy cream and stir well.
- Gently tear the burrata cheese and add it to the skillet. Let it melt slightly into the sauce, mixing everything together.
- Cook for another 2-3 minutes until heated through. Taste and adjust seasoning as needed.
- Serve immediately, garnished with fresh basil leaves.
