  • 2 cups fresh tortellini (or 1 cup dried)
  • 1 cup cherry tomatoes (halved)
  • 1 cup heavy cream
  • 8 oz burrata cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  • Start by boiling water in a large pot. Add a pinch of salt and cook the tortellini according to package instructions.
  • While the tortellini cooks, heat olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the halved cherry tomatoes to the skillet. Cook them for about 5-7 minutes until they start to soften and burst.
  • Once the tortellini is cooked, drain it, and add it directly to the skillet with the tomatoes. Pour in the heavy cream and stir well.
  • Gently tear the burrata cheese and add it to the skillet. Let it melt slightly into the sauce, mixing everything together.
  • Cook for another 2-3 minutes until heated through. Taste and adjust seasoning as needed.
  • Serve immediately, garnished with fresh basil leaves.
