  • 12 oz oz pasta (penne or rotini)
  • 2 cups fresh spinach
  • 8 oz oz burrata cheese
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  • Preheat your oven to 375°F (190°C). This ensures a perfectly baked pasta.
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add in the fresh spinach and cook until wilted, about 2-3 minutes.
  • In a mixing bowl, combine ricotta cheese, heavy cream, salt, and pepper. Mix well until smooth.
  • Stir in the cooked pasta and spinach mixture into the cheese mixture until everything is well-coated.
  • Transfer half of the pasta mixture into a greased baking dish. Tear half of the burrata cheese and place it on top.
  • Then add the remaining pasta mixture and top with the rest of the burrata.
  • Sprinkle mozzarella and Parmesan cheese evenly over the top.
  • Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  • Let it cool for a few minutes before serving. Enjoy!
