- 4 pieces boneless, skinless chicken breasts
- 6 slices bacon, chopped
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon garlic, minced
- 1 teaspoon onion powder
- to taste salt and pepper
- 2 tablespoons olive oil
- to taste fresh parsley for garnish (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside, leaving the drippings in the pan.
- In the same skillet, add sliced mushrooms and cook until they are browned, about 5-7 minutes. Stir in garlic and onion powder, cooking for an additional minute.
- Add the chicken breasts to the skillet. Season with salt and pepper. Cook for about 6-7 minutes on each side, until golden brown and cooked through.
- Reduce heat to low. Pour in chicken broth and heavy cream. Stir well to combine, scraping any bits off the bottom of the pan. Let simmer for 5 minutes.
- Add the cooked bacon back to the skillet. Stir to combine and let it heat through for about 2 minutes. Adjust seasoning if needed.
- Garnish with fresh parsley before serving. Enjoy your hearty meal!
