- 8 ounces spaghetti
- 4 ounces cream cheese (softened)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 cup cherry tomatoes (halved)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil leaves (for garnish (optional))
- 1/4 teaspoon red pepper flakes (for garnish (optional))
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the spaghetti.
- In the same pot, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the cherry tomatoes to the pot and cook until they start to soften, about 3-4 minutes.
- Reduce the heat to low and stir in the softened cream cheese and Parmesan cheese. Mix until they form a creamy sauce.
- If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.
- Add the cooked spaghetti back into the pot, coating it well with the sauce. Season with salt and black pepper to taste.
- Garnish with fresh basil and a pinch of red pepper flakes if you like a bit of heat. Serve hot and enjoy!
