  • For the chicken:
    • 4 boneless, skinless chicken breasts
    • 8 oz cream cheese, softened
    • 6 slices bacon, cooked and crumbled
    • 1 cup shredded cheddar cheese
    • 2 green onions, chopped
    • 1 tsp garlic powder
    • Salt and pepper, to taste
    • 3 cups Doritos (Nacho Cheese flavor), crushed
    • 2 large eggs
    • 2 tbsp milk

Instructions

  • Prepare the filling:
    • In a medium bowl, combine the cream cheese, crumbled bacon, shredded cheddar cheese, chopped green onions, garlic powder, salt, and pepper. Mix until well combined.
  • Prepare the chicken:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
    • Using a sharp knife, cut a pocket into each chicken breast, being careful not to cut all the way through.
    • Stuff each chicken breast with the cream cheese and bacon mixture, making sure the filling is evenly distributed. Use toothpicks to secure the opening if needed.
  • Coat the chicken:
    • In a shallow bowl, whisk together the eggs and milk.
    • Place the crushed Doritos in another shallow bowl.
    • Dip each stuffed chicken breast into the egg mixture, then coat it with the crushed Doritos, pressing lightly to adhere the crumbs to the chicken.
  • Bake:
    • Place the coated chicken breasts onto the prepared baking sheet.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and the coating is golden brown.
  • Serve:
    • Let the chicken rest for 5 minutes before serving. Garnish with extra green onions if desired.

Notes

  • For a spicier kick, use spicy Doritos or add some hot sauce to the cream cheese mixture.
  • Make sure to use softened cream cheese for easy mixing.
