- 4 fillets salmon ((6 ounces each))
- 1 cup crab meat
- 1/2 cup cooked shrimp (chopped)
- 1/2 cup cream cheese (softened)
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup green onions (chopped)
- 2 tablespoons lemon juice
- 1 tablespoon garlic (minced)
- to taste Salt
- to taste Pepper
- for drizzling Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the crab meat, chopped shrimp, cream cheese, breadcrumbs, Parmesan cheese, green onions, lemon juice, garlic, salt, and pepper. Mix well until everything is combined.
- Using a sharp knife, create a pocket in each salmon fillet by slicing horizontally through the thickest part, being careful not to cut all the way through.
- Stuff each salmon pocket generously with the crab and shrimp mixture. Secure the openings with toothpicks if necessary.
- Place the stuffed salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with a little more salt and pepper.
- Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flaky. You can check doneness by using a fork to gently flake the salmon.
