- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups corn (fresh, frozen, or canned)
- 2 medium potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 pound crab meat (lump or claw)
- 1 teaspoon Old Bay seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare all ingredients: chop onion, mince garlic, and dice potatoes.
- Melt butter in a large pot and sauté onion until translucent, then add garlic.
- Add corn and potatoes, cooking for about 5 minutes.
- Pour in chicken broth and bring to a gentle boil, then simmer until potatoes are tender.
- Stir in heavy cream and cook on low for 5 minutes.
- Fold in crab meat and Old Bay seasoning, simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Ladle into bowls and garnish with parsley.
Notes
- For a thicker chowder, allow it to simmer longer after adding the cream.
- Feel free to adjust the seasoning based on personal preference.
