- 4 large eggs
- 1/2 cup cottage cheese

Instructions
- Start by cracking the eggs into a bowl. Whisk them until the yolks and whites are fully combined.
- Add the cottage cheese to the eggs. Stir well to combine; it should look creamy and a bit lumpy.
- Heat a non-stick skillet over medium heat. Melt the butter or add the olive oil, swirling it around to coat the pan.
- Pour the egg and cottage cheese mixture into the skillet. Let it cook for about 30 seconds without stirring.
- Gently stir with a spatula, folding the eggs as they begin to set. Cook for another 1-2 minutes until the eggs are just set but still soft.
- Season with salt and pepper to taste. Remove from heat and garnish with chives or parsley if you like.
