  • 1/2 cup rolled oats
  • 1/2 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon (optional)
  • to taste Chopped nuts or seeds (for topping)

Instructions

  • Preheat your oven to 350°F (175°C). If you’re using a microwave-safe bowl, you can skip this step!
  • In a medium bowl, mix together the cottage cheese, oats, honey (or maple syrup), vanilla extract, baking powder, salt, and cinnamon until well combined.
  • Gently fold in the blueberries, being careful not to crush them.
  • If baking, pour the mixture into a greased muffin tin, filling each cup about 3/4 full. If making a bowl, simply pour everything into a microwave-safe bowl.
  • Bake for 20-25 minutes or until the tops are golden brown and a toothpick comes out clean. For the microwave, cook for about 2-3 minutes on high, checking for doneness.
