A comforting dish featuring hearty chili topped with a golden cornbread crust.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 2 cups cooked chili (your favorite recipe, or store-bought)
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/4 cup sugar
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup shredded cheese (optional, for extra gooeyness)
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chili by heating it until warm.
  3. Combine cornmeal, flour, sugar, baking powder, and salt in a bowl. In another bowl, whisk milk, oil, and eggs, then mix into the dry ingredients.
  4. Pour warm chili into a baking dish, then spread the cornbread batter on top, adding cheese if desired.
  5. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  6. Let cool slightly, garnish with green onions, and serve.

Notes

  • Feel free to customize the chili with your favorite ingredients.
  • Leftovers can be stored in the refrigerator for a few days.
