- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1/4 cup sugar
- 2 large eggs
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup shredded cheese (optional, for extra gooeyness)
- Chopped green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the chili by heating it until warm.
- Combine cornmeal, flour, sugar, baking powder, and salt in a bowl. In another bowl, whisk milk, oil, and eggs, then mix into the dry ingredients.
- Pour warm chili into a baking dish, then spread the cornbread batter on top, adding cheese if desired.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Let cool slightly, garnish with green onions, and serve.
