- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup crushed chocolate sandwich cookies
- 1 cup heavy cream
- 1/2 cup powdered sugar
- Additional crushed cookies for topping
Instructions
- Preheat your oven to 375°F (190°C). Grease a donut pan with cooking spray.
- In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt. Mix well.
- In another bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix.
- Gently fold in the crushed cookies.
- Spoon the batter into the prepared donut pan, filling each cavity about halfway.
- Bake for 12-15 minutes or until the donuts spring back when touched. Let cool for 5 minutes before transferring to a wire rack.
- Meanwhile, prepare the filling by whipping the heavy cream and powdered sugar until stiff peaks form.
- Once the donuts have cooled, use a piping bag to fill each donut with the whipped cream mixture.
- Top with additional crushed cookies for a delightful finish.
