- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup crushed cookies (like Oreos)
- 1/2 cup cream cheese, softened
- 1 cup powdered sugar
- Extra crushed cookies for rolling
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour, cocoa powder, baking powder, and salt together until well combined.
- In a separate bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
- Add the egg and vanilla extract to the butter mixture, mixing until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Don’t overmix!
- In another bowl, combine the softened cream cheese and powdered sugar until smooth.
- Fold in the crushed cookies into the cookie dough, creating a delightful mixture.
- Take a tablespoon of cookie dough, flatten it slightly, and place a small spoonful of the cream cheese mixture in the center. Fold the dough around the filling and roll it into a ball.
- Roll each cookie ball in crushed cookies before placing them on a parchment-lined baking sheet.
- Bake for 10-12 minutes until the edges are set but the centers remain soft. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
