- 2 cups fresh pineapple, chopped (or canned, drained, and chopped)
- 1 cup coconut cream (not coconut milk)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 tablespoon lime juice (for a zesty kick)
- a pinch salt (to enhance flavors)
Instructions
- In a blender, combine the chopped pineapple, coconut cream, honey, lime juice, and a pinch of salt.
- Blend until smooth. If you prefer some pineapple chunks, pulse the blender a few times instead of blending completely.
- Taste the mixture. If you want it sweeter, add more honey or maple syrup and blend again.
- Pour the mixture into popsicle molds, leaving a little space at the top for expansion during freezing.
- Add sticks if your molds require them, then place the molds in the freezer.
- Freeze for at least 4-6 hours, or until solid. You’ll know they’re ready when they’re firm to the touch.
- To remove the popsicles, run warm water over the outside of the molds for a few seconds before gently pulling them out.
