  • 1 can coconut milk (13.5 ounces)
  • 2 limes juiced
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (grated)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Season the salmon fillets with salt and pepper on both sides.
  • In a mixing bowl, combine the coconut milk, lime juice, honey, minced garlic, and grated ginger. Mix well.
  • Place the seasoned salmon fillets in a baking dish and pour the coconut mixture over them.
  • Bake for 15-20 minutes or until the salmon flakes easily with a fork.
