- 4 fillets salmon
- 1 can coconut milk (13.5 ounces)
- 2 limes juiced
- 2 tablespoons honey or maple syrup
- 2 cloves garlic (minced)
- 1 teaspoon ginger (grated)
- to taste salt and pepper
- to garnish fresh cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and pepper on both sides.
- In a mixing bowl, combine the coconut milk, lime juice, honey, minced garlic, and grated ginger. Mix well.
- Place the seasoned salmon fillets in a baking dish and pour the coconut mixture over them.
- Bake for 15-20 minutes or until the salmon flakes easily with a fork.
- Sprinkle fresh cilantro on top before serving.
