  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • 1 jalapeño, finely chopped (optional for heat)

Instructions

  1. Cook fresh corn for 5-7 minutes or drain and rinse canned corn.
  2. In a large bowl, combine mayonnaise, sour cream, and lime juice until smooth.
  3. Add corn, cotija cheese, cilantro, chili powder, and jalapeño; mix well.
  4. Season with salt and pepper to taste.
  5. Chill for at least 30 minutes before serving with tortilla chips or veggies.
