- 4 cups of fresh corn (or 2 cans of corn)
- 1 cup of mayonnaise
- 1 cup of sour cream
- 1 cup of crumbled cotija cheese
- 1/2 cup of chopped cilantro
- 2 tablespoons of lime juice
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 1 jalapeño, finely chopped (optional for heat)
Instructions
- Cook fresh corn for 5-7 minutes or drain and rinse canned corn.
- In a large bowl, combine mayonnaise, sour cream, and lime juice until smooth.
- Add corn, cotija cheese, cilantro, chili powder, and jalapeño; mix well.
- Season with salt and pepper to taste.
- Chill for at least 30 minutes before serving with tortilla chips or veggies.
Notes
- For added heat, include the jalapeño.
- Chilling enhances the flavor.
