- 1 cup all-purpose flour
- 1/2 cup unsalted butter (softened)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 8 oz cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon ground cinnamon
- 1/4 cup granulated sugar (for topping)
- 1/4 cup melted butter (for brushing)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish with cooking spray or line it with parchment paper for easy removal.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2 minutes.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
- Spread half of the dough into the prepared baking dish, pressing it down evenly.
- In a separate bowl, beat the softened cream cheese with the powdered sugar and ground cinnamon until smooth. Spread this mixture over the layer of dough in the baking dish.
- Drop spoonfuls of the remaining dough on top of the cream cheese layer. Don’t worry about covering it all; some gaps are fine!
- Brush the top with melted butter and sprinkle with the cinnamon-sugar mixture.
- Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Let the bars cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Cut into squares and enjoy!
