Deliciously fluffy Cinnamon Roll Muffins with a sweet cinnamon filling and creamy frosting.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • 1 tablespoon ground cinnamon (for filling)
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners or grease.
  2. Mix dry ingredients (flour, baking powder, salt, cinnamon, sugar) in a bowl.
  3. In another bowl, combine wet ingredients (egg, milk, melted butter, vanilla).
  4. Mix wet and dry ingredients until just combined.
  5. Prepare the cinnamon filling by mixing brown sugar and cinnamon.
  6. Fill muffin cups halfway with batter, add cinnamon filling, and top with more batter.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
  8. Prepare frosting by whisking powdered sugar and milk.
  9. Frost cooled muffins and enjoy!
