Delicious muffins that combine the flavors of cinnamon rolls and French toast, perfect for breakfast or brunch!

  • Total Time: 30

Ingredients

Scale
  • 2 cups cinnamon roll dough (from a tube or homemade)
  • 1/2 cup milk
  • 3 large eggs
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/2 cup cream cheese (optional, for filling)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or using liners.
  • In a large bowl, whisk together the milk, eggs, sugar, vanilla extract, and cinnamon until well combined.
  • Cut the cinnamon roll dough into small pieces and gently fold them into the egg mixture, ensuring everything is coated.
  • If using cream cheese, cut it into small cubes and fold it into the dough mixture for a creamy surprise in the center.
  • Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  • Bake in the preheated oven for 18-20 minutes or until the muffins are golden brown and a toothpick comes out clean.
  • While the muffins are baking, prepare the glaze by mixing the powdered sugar and milk until smooth.
  • Once done, allow the muffins to cool for a few minutes before drizzling them with glaze.
