- 1 pound chorizo sausage (spicy or mild, as preferred)
- 4 medium potatoes (peeled and diced)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 4 cups chicken broth (or vegetable broth)
- 1 cup heavy cream (or half-and-half for a lighter option)
- Salt (to taste)
- Pepper (to taste)
- 1 tablespoon olive oil (for sautéing)
- Chopped green onions or cilantro (for garnish)
- Shredded cheese (optional, for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until fragrant, about 2-3 minutes.
- Add chorizo sausage to the pot. Cook until browned, breaking it up into smaller pieces, about 5-7 minutes.
- Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
- Stir in heavy cream and allow to cook for an additional 5 minutes. Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions or cilantro, and shredded cheese if desired.
