  • 1 cup heavy cream (or half-and-half for a lighter option)
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tablespoon olive oil (for sautéing)
  • Chopped green onions or cilantro (for garnish)
  • Shredded cheese (optional, for serving)

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sautéing until fragrant, about 2-3 minutes.
  • Add chorizo sausage to the pot. Cook until browned, breaking it up into smaller pieces, about 5-7 minutes.
  • Stir in diced potatoes and pour in chicken broth. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
  • Stir in heavy cream and allow to cook for an additional 5 minutes. Season with salt and pepper to taste.
