- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk (or milk with 1 tablespoon vinegar)
- ½ cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup chopped pecans (plus more for garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir until well combined.
- Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Mix until just combined.
- Slowly stir in the boiling water. The batter will be thin, but that’s okay!
- Fold in the chopped pecans gently.
- Pour the batter evenly into the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Once done, allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
