  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk (or milk with 1 tablespoon vinegar)
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup chopped pecans (plus more for garnish)

Instructions

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, mix the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir until well combined.
  • Add the buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients. Mix until just combined.
  • Slowly stir in the boiling water. The batter will be thin, but that’s okay!
  • Fold in the chopped pecans gently.
  • Pour the batter evenly into the prepared pans.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Once done, allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
