  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup espresso or strong brewed coffee
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips (optional)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a bowl, mash the ripe bananas until smooth. You can use a fork or a potato masher.
  • Stir in the melted butter until combined.
  • Add the sugars, eggs, and vanilla extract, mixing until smooth.
  • In another bowl, combine the dry ingredients: flour, cocoa powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture, being careful not to overmix.
  • Fold in the espresso or coffee and chocolate chips if using.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  • Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
