- 3 whole ripe bananas
- 1/2 cup unsweetened cocoa powder
- 1/4 cup espresso or strong brewed coffee
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, mash the ripe bananas until smooth. You can use a fork or a potato masher.
- Stir in the melted butter until combined.
- Add the sugars, eggs, and vanilla extract, mixing until smooth.
- In another bowl, combine the dry ingredients: flour, cocoa powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet mixture, being careful not to overmix.
- Fold in the espresso or coffee and chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
