Instructions
- Beat the softened cream cheese until smooth.
- Add the powdered sugar and vanilla extract, and mix until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Using a cookie scoop or spoon, portion the cheesecake mixture into small balls and place them on a parchment-lined baking sheet.
- Insert a stick into each ball and freeze for at least 4 hours or until solid.
- Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
- Dip each frozen cheesecake pop into the melted chocolate, allowing excess to drip off.
- Immediately sprinkle with toppings before the chocolate sets.
- Return pops to the baking sheet and freeze for an additional 30 minutes to set the chocolate.
