  • 1 cup heavy whipping cream
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil (optional)
  • Craft sticks (or lollipop sticks)
  • Sprinkles (optional for decoration)

Instructions

  • Beat the softened cream cheese until smooth.
  • Add the powdered sugar and vanilla extract, and mix until well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  • Using a cookie scoop or spoon, portion the cheesecake mixture into small balls and place them on a parchment-lined baking sheet.
  • Insert a stick into each ball and freeze for at least 4 hours or until solid.
  • Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  • Dip each frozen cheesecake pop into the melted chocolate, allowing excess to drip off.
  • Immediately sprinkle with toppings before the chocolate sets.
  • Return pops to the baking sheet and freeze for an additional 30 minutes to set the chocolate.
