- 1 cup all-purpose flour

- 1 teaspoon vanilla extract
- 1 can coconut cream
- 1/2 cup powdered sugar

- 1/2 teaspoon salt
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, and vanilla extract until smooth. Let the batter sit for about 15 minutes.
- Heat a non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
- Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
- Flip and cook for another 1-2 minutes. Repeat with the remaining batter, stacking the crepes on a plate as you go.
- In a separate bowl, combine coconut cream, powdered sugar, cocoa powder, and salt. Mix until smooth and creamy.
- To assemble, place a crepe on a plate, fill with a generous amount of the coconut cream filling, then fold and roll it up.
- Top with fresh fruit, chocolate shavings, or shredded coconut if desired. Serve immediately!
