  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups milk
  • 2 tablespoons melted butter
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 can coconut cream
  • 1/2 cup powdered sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt

Instructions

  • In a mixing bowl, whisk together flour, eggs, milk, melted butter, sugar, and vanilla extract until smooth. Let the batter sit for about 15 minutes.
  • Heat a non-stick skillet over medium heat. Lightly grease with butter or cooking spray.
  • Pour about 1/4 cup of the batter into the skillet, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges lift and the bottom is lightly browned.
  • Flip and cook for another 1-2 minutes. Repeat with the remaining batter, stacking the crepes on a plate as you go.
  • In a separate bowl, combine coconut cream, powdered sugar, cocoa powder, and salt. Mix until smooth and creamy.
  • To assemble, place a crepe on a plate, fill with a generous amount of the coconut cream filling, then fold and roll it up.
  • Top with fresh fruit, chocolate shavings, or shredded coconut if desired. Serve immediately!
