- 2 ripe bananas mashed
- 1/4 cup melted butter
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
- Optional 1/4 cup nuts
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a large bowl, mash the bananas with a fork until smooth. Stir in the melted butter until combined.
- Add the sugar, egg, and vanilla extract to the banana mixture. Mix until everything is well blended.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually incorporate the dry ingredients into the wet mixture.
- Fold in the chocolate chips (and nuts if using) until just combined. Don’t overmix!
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 5 minutes; then transfer them to a wire rack to cool completely.
