- 1 pound chicken breast (diced)
- 2 cans white beans (drained and rinsed)
- 1 can diced tomatoes (14.5 ounces)
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper (to taste)
- fresh cilantro and lime wedges (optional, for serving)
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté until soft.
- Stir in the diced chicken breast, cooking until browned on all sides.
- Add the white beans, diced tomatoes, and chicken broth to the pot. Stir to combine.
- Season with cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat to low.
- Simmer for 30 minutes, stirring occasionally, until the flavors meld together.
- Serve hot with fresh cilantro and lime wedges, if desired.
