  • 2 cans white beans (drained and rinsed)
  • 1 can diced tomatoes (14.5 ounces)

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper (to taste)
  • fresh cilantro and lime wedges (optional, for serving)

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté until soft.
  • Stir in the diced chicken breast, cooking until browned on all sides.
  • Add the white beans, diced tomatoes, and chicken broth to the pot. Stir to combine.
  • Season with cumin, chili powder, salt, and pepper. Bring to a boil, then reduce heat to low.
  • Simmer for 30 minutes, stirring occasionally, until the flavors meld together.
