  • 1 cup bell peppers, diced

  • 1 avocado sliced
  • 1/2 cup salsa
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken and cook for about 5-7 minutes until browned and cooked through.
  • Stir in the taco seasoning, followed by the black beans, corn, and bell peppers.
  • Cook for an additional 3-4 minutes, allowing the flavors to meld.
  • Prepare the rice according to package instructions if not pre-cooked.
  • To assemble, place a scoop of rice in a bowl, followed by the chicken mixture.
  • Top with cheese, avocado, salsa, and cilantro.
