- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 packet taco seasoning
- 1 cup black beans, rinsed and drained
- 1 cup corn
- 1 cup bell peppers, diced
- 1 cup shredded cheese
- 1 avocado sliced
- 1/2 cup salsa
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced chicken and cook for about 5-7 minutes until browned and cooked through.
- Stir in the taco seasoning, followed by the black beans, corn, and bell peppers.
- Cook for an additional 3-4 minutes, allowing the flavors to meld.
- Prepare the rice according to package instructions if not pre-cooked.
- To assemble, place a scoop of rice in a bowl, followed by the chicken mixture.
- Top with cheese, avocado, salsa, and cilantro.
- Serve warm and enjoy!
