- 1 pound boneless, skinless chicken thighs
- 3 tablespoons olive oil
- 2 teaspoons ground cumin
- 2 teaspoons ground paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 4 large pita breads or wraps
- 1 cup chopped lettuce
- 1 cup diced tomatoes
- 1/2 cup sliced cucumbers
- 1/2 medium red onion, thinly sliced
- 1 cup mayonnaise (for garlic sauce)
- 4 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt, to taste
Instructions
- In a large bowl, combine olive oil, cumin, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken thighs and coat them evenly. Let marinate for at least 30 minutes, or overnight in the fridge for best results.
- Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for 6-7 minutes per side, until golden brown and cooked through. Use a meat thermometer to ensure it reaches 165°F.
- While the chicken cooks, prepare the garlic sauce. In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, and a pinch of salt. Adjust the seasoning to taste.
- Once the chicken is done, let it rest for a few minutes before slicing it into strips.
- To assemble the wraps, place some lettuce, tomatoes, cucumbers, and onion on each pita. Top with sliced chicken and drizzle generously with garlic sauce.
