- 2 lbs boneless, skinless chicken thighs
- 1/4 cup olive oil
- 3 tablespoons shawarma spice mix (cumin, paprika, turmeric, cinnamon, allspice, salt, black pepper)
- 4 cloves garlic, minced
- 1/4 cup plain yogurt
- 1/4 teaspoon cayenne pepper (optional for heat)
- Salt to taste
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- Salt to taste
- Pita bread or wraps for serving
Instructions
- In a bowl, mix olive oil, shawarma spice mix, minced garlic, yogurt, cayenne pepper, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 1 hour, or overnight for best results.
- Preheat your grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until fully cooked and slightly charred.
- In a small bowl, whisk together mayonnaise, lemon juice, minced garlic, and a pinch of salt. Adjust to taste and set aside.
- Once the chicken is cooked, let it rest for a few minutes, then slice it thinly. Serve in pita bread with garlic sauce, fresh veggies, and your favorite toppings.
