  • 1 lb chicken sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium bell pepper (diced)
  • 1 cup cherry tomatoes (halved)
  • 2 cups spinach or kale
  • 4 large eggs
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional shredded cheese (for topping)

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
  • Add the diced onion and bell pepper to the skillet. Sauté for another 5 minutes until the onions are translucent.
  • Stir in the cherry tomatoes and spinach (or kale), cooking until the spinach is wilted and tomatoes are softened, about 3-4 minutes.
  • Make four small wells in the mixture and crack an egg into each well. Cover the skillet and cook for another 5-7 minutes, or until the eggs are set to your liking.
  • Season with salt and pepper. If desired, sprinkle cheese on top and let it melt before serving.
