- 1 lb chicken sausage (sliced)
- 1 medium onion (diced)
- 1 medium bell pepper (diced)
- 1 cup cherry tomatoes (halved)
- 2 cups spinach or kale
- 4 large eggs
- 2 tablespoons olive oil
- to taste salt and pepper
- optional shredded cheese (for topping)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet. Sauté for another 5 minutes until the onions are translucent.
- Stir in the cherry tomatoes and spinach (or kale), cooking until the spinach is wilted and tomatoes are softened, about 3-4 minutes.
- Make four small wells in the mixture and crack an egg into each well. Cover the skillet and cook for another 5-7 minutes, or until the eggs are set to your liking.
- Season with salt and pepper. If desired, sprinkle cheese on top and let it melt before serving.
