  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  • Flatten the chicken breasts to about 1/2 inch thickness.
  • In a shallow dish, combine flour, salt, and pepper. Dredge each chicken breast in the flour mixture.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 4-5 minutes on each side.
  • Remove the chicken and set aside. In the same skillet, pour in chicken broth and lemon juice.
  • Add capers and let the sauce simmer for about 3-4 minutes.
  • Return the chicken to the skillet, spooning sauce over the top. Let it cook for another minute or so.
  • Garnish with chopped parsley before serving.
