  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup capers (rinsed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound pasta (linguine or spaghetti)
  • Fresh parsley (for garnish)

Instructions

  • In a bowl, mix the ground chicken, breadcrumbs, Parmesan, egg, salt, and pepper. Form into small meatballs.
  • Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown, about 5 minutes on each side.
  • Add minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and lemon juice, bringing it to a simmer.
  • Add capers and let the sauce reduce slightly, about 5 minutes.
  • Meanwhile, cook pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
  • Toss the cooked pasta with the meatballs and sauce, adding reserved pasta water if needed.
  • Garnish with fresh parsley and serve warm.
