- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers (rinsed)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound pasta (linguine or spaghetti)
- Fresh parsley (for garnish)
Instructions
- In a bowl, mix the ground chicken, breadcrumbs, Parmesan, egg, salt, and pepper. Form into small meatballs.
- Heat olive oil in a skillet over medium heat. Sear the meatballs until golden brown, about 5 minutes on each side.
- Add minced garlic and cook for 1 minute until fragrant. Pour in chicken broth and lemon juice, bringing it to a simmer.
- Add capers and let the sauce reduce slightly, about 5 minutes.
- Meanwhile, cook pasta according to package instructions. Reserve 1/2 cup of pasta water before draining.
- Toss the cooked pasta with the meatballs and sauce, adding reserved pasta water if needed.
- Garnish with fresh parsley and serve warm.
