- 1 pound ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 jar marinara sauce (about 24 ounces)
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but don't overmix.
- Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
- Bake the meatballs for 20-25 minutes, or until they reach an internal temperature of 165°F (74°C) and are golden brown.
- While the meatballs bake, heat the marinara sauce in a large saucepan over medium heat.
- Once the meatballs are done, carefully transfer them to the saucepan with the marinara sauce and simmer for about 5 minutes.
- Sprinkle mozzarella cheese over the meatballs and cover the pan until the cheese melts, about 2-3 minutes.
- Serve hot with pasta, in a sub, or on their own with a sprinkle of fresh herbs!
