  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar marinara sauce (about 24 ounces)
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined, but don't overmix.
  • Form the mixture into meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.
  • Bake the meatballs for 20-25 minutes, or until they reach an internal temperature of 165°F (74°C) and are golden brown.
  • While the meatballs bake, heat the marinara sauce in a large saucepan over medium heat.
  • Once the meatballs are done, carefully transfer them to the saucepan with the marinara sauce and simmer for about 5 minutes.
  • Sprinkle mozzarella cheese over the meatballs and cover the pan until the cheese melts, about 2-3 minutes.
  • Serve hot with pasta, in a sub, or on their own with a sprinkle of fresh herbs!
