  • 1 pound chicken breast (diced)
  • 8 ounces pasta (penne or rotini preferred)
  • 1 cup Caesar dressing
  • 1 cup shredded parmesan cheese
  • 2 cups romaine lettuce (chopped)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • Optional: croutons (for topping)

Instructions

  • Start by cooking the pasta according to package instructions. Aim for al dente, about 8-10 minutes.
  • While the pasta cooks, heat the olive oil in a large skillet over medium heat.
  • Add the diced chicken to the skillet, seasoning with salt and pepper. Cook for about 6-8 minutes, until the chicken is golden brown and cooked through.
  • Once the chicken is done, drain the pasta and add it to the skillet with the chicken.
  • Pour in the Caesar dressing and mix well until everything is evenly coated. Cook for another 2-3 minutes to heat through.
  • Finally, stir in the chopped romaine and half of the parmesan cheese. Mix until the lettuce is wilted and everything is combined.
  • Serve hot, topped with the remaining parmesan and croutons if desired.
