- 8 oz oz rotini pasta (or any preferred pasta)
- 2 cups cooked chicken (shredded or diced)
- 1 cup romaine lettuce (chopped)
- 1/2 cup cherry tomatoes (halved)
- 1/4 cup grated parmesan cheese
- 1/2 cup Caesar dressing (store-bought or homemade)
- Salt and pepper (to taste)
- Optional: croutons (for topping)
Instructions
- Start by boiling a large pot of salted water. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta is cooking, prepare your chicken. If using rotisserie chicken, shred it into bite-sized pieces.
- In a large mixing bowl, combine the cooked pasta, chicken, chopped romaine lettuce, halved cherry tomatoes, and grated parmesan cheese.
- Drizzle the Caesar dressing over the salad and toss until well coated. Adjust the amount of dressing as desired.
- Season with salt and pepper to taste. Top with croutons just before serving.
- Serve immediately or refrigerate for about 30 minutes to let the flavors meld.
